Butter Beans with Chunky Tomato Sauce and Burrata

This recipe combines the creamy richness of burrata with the hearty flavors of butter beans and a vibrant chunky tomato sauce. It's a delicious and easy-to-make dish that's perfect for a satisfying meal.

What You'll Need
Ingredients
  • 1 can of butter beans, drained and rinsed
  • 2 tablespoons olive oil
  • 1 small onions, finely chopped
  • 2 cloves of garlic minced
  • 1 can of diced tomatoes or fresh tomatoes - in the photo I used fresh cherry tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • salt and black pepper to taste
  • 1 ball of burrata cheese
  • basil leaves for garnish
Directions
  1. In a large skillet, heat olive oil over medium heat. Add finely chopped onions and cook until they become translucent. Add minced garlic and sauté for an additional minute until fragrant.
  2. Add diced tomatoes (with their juice) to the skillet. Stir in dried oregano, dried basil, salt, black pepper, and red pepper flakes if you want some heat. Allow the sauce to simmer for about 10-15 minutes until it thickens and flavors meld.
  3. Gently fold in the drained and rinsed butter beans. Simmer for an additional 5-7 minutes, allowing the beans to heat through and absorb the flavors of the sauce.
  4. While the beans and sauce are simmering, prepare the burrata. Place the burrata on a serving plate.
  5. Spoon the butter beans and chunky tomato sauce around the burrata, leaving the center of the burrata exposed.
  6. Drizzle a bit of olive oil over the burrata and the beans. Sprinkle with additional salt and black pepper if needed. Garnish with fresh basil leaves.
  7. Serve the butter beans and chunky tomato sauce with burrata immediately, accompanied by crusty bread or baguette for dipping.
  8. Break open the burrata, allowing the creamy center to mingle with the butter beans and tomato sauce. Enjoy this delightful and comforting dish!

Butter beans=lima beans!! Who knew?!?

Hi!
Lima beans are also known as butter beans! For this recipe, I used beans from GOYA, and the package said butter beans. Hope this explains it.

Photo looks like fresh cherry tomatoes were used. Oddly not mentioned within recipe as alternative.

Thank you for the note. In the ingredients I noted, you can opt for fresh tomatoes or canned. The choice of tomato is up to you! In the photo, I used cherry tomatoes. In any case, I will make a note stating the type of tomato. I hope this helps!
