Ingredients
-
1
can of butter beans, drained and rinsed
-
2 tablespoons
olive oil
-
1
small onions, finely chopped
-
2
cloves of garlic minced
-
1
can of diced tomatoes or fresh tomatoes - in the photo I used fresh cherry tomatoes
-
1 teaspoon
dried oregano
-
1 teaspoon
dried basil
-
salt and black pepper to taste
-
1
ball of burrata cheese
-
basil leaves for garnish
Directions
-
In a large skillet, heat olive oil over medium heat. Add finely chopped onions and cook until they become translucent. Add minced garlic and sauté for an additional minute until fragrant.
-
Add diced tomatoes (with their juice) to the skillet. Stir in dried oregano, dried basil, salt, black pepper, and red pepper flakes if you want some heat. Allow the sauce to simmer for about 10-15 minutes until it thickens and flavors meld.
-
Gently fold in the drained and rinsed butter beans. Simmer for an additional 5-7 minutes, allowing the beans to heat through and absorb the flavors of the sauce.
-
While the beans and sauce are simmering, prepare the burrata. Place the burrata on a serving plate.
-
Spoon the butter beans and chunky tomato sauce around the burrata, leaving the center of the burrata exposed.
-
Drizzle a bit of olive oil over the burrata and the beans. Sprinkle with additional salt and black pepper if needed. Garnish with fresh basil leaves.
-
Serve the butter beans and chunky tomato sauce with burrata immediately, accompanied by crusty bread or baguette for dipping.
-
Break open the burrata, allowing the creamy center to mingle with the butter beans and tomato sauce. Enjoy this delightful and comforting dish!
