Air-fryer Biscuits with Lemon-Kissed Strawberries

These biscuits are topped with juicy strawberries that have been lightly sweetened and brightened with a touch of lemon. It's a simple and delicious dessert that's perfect for any occasion! —Ann Thomas

What You'll Need
Ingredients
  • 1 cup all-purpose flour
  • 1/2 tablespoon baking powder
  • Pinch salt
  • 1/4 cup sugar
  • 1/3 cup butter
  • 1/2 heavy cream (or thickened cream)
  • 4 strawberries
  • 1 tablespoon lemon juice
  • 1 tablespoon sugar
Directions
  1. In a bowl, mix together the flour, baking powder, sugar, and salt.
  2. Rub the butter in until the mixture resembles coarse crumbs. Leave a few large crumbs for added yum.
  3. Fold in the heavy/thickened cream until the dough just comes together. It'll be slightly sticky.
  4. Pat the dough out into an even circle, about 1 inch thick. Use a biscuit cutter (or a your palms) to form 2-inch rounds from the dough.
  5. Place the biscuit rounds onto the air fryer tray lined with baking paper, and pop them into your air fryer at 180°C. Bake for about 20-25 minutes, or until your biscuits are golden and flecked with brown spots.
  6. While biscuits bake, slice 4 strawberries in quarters (or however you like them), toss with 1 tablespoon lemon juice and 1 tablespoon sugar. Let this mixture macerate in your fridge for about 20 minutes.
