Ingredients
-
1 cup
all-purpose flour
-
1/2 tablespoon
baking powder
-
Pinch
salt
-
1/4 cup
sugar
-
1/3 cup
butter
-
1/2
heavy cream (or thickened cream)
-
4
strawberries
-
1 tablespoon
lemon juice
-
1 tablespoon
sugar
Directions
-
In a bowl, mix together the flour, baking powder, sugar, and salt.
-
Rub the butter in until the mixture resembles coarse crumbs. Leave a few large crumbs for added yum.
-
Fold in the heavy/thickened cream until the dough just comes together. It'll be slightly sticky.
-
Pat the dough out into an even circle, about 1 inch thick. Use a biscuit cutter (or a your palms) to form 2-inch rounds from the dough.
-
Place the biscuit rounds onto the air fryer tray lined with baking paper, and pop them into your air fryer at 180°C. Bake for about 20-25 minutes, or until your biscuits are golden and flecked with brown spots.
-
While biscuits bake, slice 4 strawberries in quarters (or however you like them), toss with 1 tablespoon lemon juice and 1 tablespoon sugar. Let this mixture macerate in your fridge for about 20 minutes.
