This arugula burrata salad is perfect spring and summer salad. It is loaded with fresh herbs, figs, and walnuts, and it is topped with a sweet balsamic dressing. —Kelsey

Ingredients
  • Salad
  • 5 cups arugula
  • 8 ounces burrata
  • 1/2 cup figs, quartered
  • 1/2 cup fresh basil, chopped
  • 1/4 cup fresh mint, chopped
  • 1/2 cup walnuts, chopped
  • Balsamic Vinaigrette
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic
  • 1 teaspoon honey
  • 1/4 teaspoon salt
  • black pepper
Directions
  1. Chop up your figs, basil, mint, and walnuts.
  2. Add all the dressing ingredients to a small bowl or jar and whisk together.
  3. Add arugula to a plate and top with all the ingredients. Serve with the ball of burrata in the center or slice it into pieces and scatter it across the salad. Top with the balsamic dressing and serve.
