Oatmeal meets pancake in this delicious, filling dish that you can bake for make-ahead breakfasts all week long or brunch with friends. —Food52
Ingredients

Stemilt Cosmic Crisp apple, peeled, cored, and diced

1 cup
old fashioned oats

1/2 cup
milk (any type)

1/4 cup
maple syrup

large eggs
-
1 teaspoon
baking powder
-
1/2 teaspoon
cinnamon

1/2 teaspoon
vanilla extract

1 pinch
salt (optional)
Directions

Preheat your oven to 350 degrees F. Grease a 7.5”x6” baking dish.

Add all ingredients to a blender except the apple. Blend until creamy and little to no chunks of the oats remain.

Pour batter into the greased baking dish and evenly top with prepared apples.

Bake for 20-25 minutes or until a toothpick inserted in the middle comes out clean.

Cut into squares and serve.

Oatmeal can be refrigerated for up to 6 days and reheated or served cold.
