Ingredients

mozarella cheese, shredded - or if you want 100% authentic use "canastra cheese"

parmesan cheese, shredded

vegetable oil

whole milk

tapioca (cassava) starch

1/2 cup
tapioca flour

Directions
- Preheat your oven to 350F.
- In a mixing bowl, mix your milk and vegetable oil. In a deep pan, bring them to an "almost" boil.
- Mix your tapioca flour, starch (cassava starch), and a handful of salt in a separate mixing bowl.
- In a slow process, mix the warm milk and oil mixture with the dry ingredients. Slowly pour the warm mixture until it forms a dough-like mixture. Let it cool, and get ready to use your hands.
- With your hands, mix everything well, including the flour and starch. When the dough is cooled, add the egg. Remix everything—with your hands. At this point, the dough will feel like silk.
- Now, add your cheeses to the mixture. Again, with your hands, mix everything well. Fold the dough and make sure all the cheese is well incorporated into everything.
- Here is the fun part: Use your hands to make 2 balls and place them on a baking tray. Leave space between each ball so the bread grows easily.
- Bake the pão de queijo in the oven for 30-45 minutes. It's ready when it's golden brown on top. Ultimately, it should have a crunchy exterior and a cheesy and gooey interior.
