Caramelly Banana Peanut ButterĀ cake

This moist cake is partly inspired by Molly Yeh's party trick peanut butter cake, which I have always wanted to combine with enough banana to be noticeable while somehow also keeping it cakelike. In this recipe the caramel flavor is made by mixing half brown sugar and half honey with melted butter. Using salted butter helps bring out the subtle complexity of flavors. Mixing in the banana last keeps the banana flavor more noticeable. If you don't think it quite sweet enough to count as a cake you can either double the sugar or or call it a bread. Use a loaf pan for a snack sort of cake, but you could also bake in a 9 inch round pan to make it a birthday type cake in which case I suggest a penuche frosting. —Starmade

What You'll Need
Ingredients
  • 3 very ripe bananas (about 1.25 cups mashed)
  • 1/4 cup melted butter (I like salted butter here)
  • 1/4 cup flavorless vegetable oil
  • 1/4 cup Honey
  • 1/4 cup dark brown sugar
  • 1 egg
  • 1/2 cup peanut butter (your choice but I like it chunky)
  • 1/2 cup sour cream
  • 1 teaspoon vanilla extract
  • .5 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1.5 cups all purpose flour
Directions
  1. Preheat oven to 350. Put the butter in a metal or ovenproof mixing bowl and place it in preheating oven to melt. While it melts get baking pan ready (use either a standard loaf pan or a 9 inch round pan). Mash bananas (I always do this in a measuring cup so I can tell when I have enough).
  2. Mix wet ingredients. When butter is just melted, remove pan from oven and (being careful not to burn yourself on the hot pan) add the oil. Use the cup you measured the oil in to measure the honey (the oil keeps it from sticking to the cup) and the brown sugar. Mix with a mixer or whisk till it is a nice emulsion. By this time it should be cool enough to add the egg. Mix till emulsified. Add peanut butter, sour cream, and vanilla.
  3. Mix dry ingredients (salt, leavenings, flour) and add to the wet ones. Fold it all gently till flour is just combined. Now fold n mashed banana till just mixed. Scrape into loaf pan, place in oven and bake for 35-40 minutes. Check at half hour if baking in a flat pan.
