This is great easy dish for one, made from foods on hand.
You can multiply it to serve for a couple or for more. For two, cooking times will remain more or less the same. For a large group, you will need longer times - so check the vegetables as they cook. This recipe is vegetarian, but you can adjust it for what you have on hand and/or people's preferences - vegan, nut, fish, meat. —Nancy

Ingredients

Sweet potato (225g)

2/3 cup
peas (85g) - use what you have, fresh, frozen or canned

3 tablespoons
chopped onion (40g)

1/3 cup
cashews (45g) - or other protein (shredded cooked meat, other nuts, grated cheese)

1 tablespoon
butter (15g)

1 teaspoon
curry or garam masala blend (5g) - more or less to taste

2 tablespoons
sour cream (30ml) - or other sauce to taste

4 tablespoons
cilantro fresh (16g) - chopped

2 pinches
salt and pepper, to taste

Ginger(5g) - fresh grated, or more to taste

Garlic clove (4g) - chopped, or more to taste
Directions

Wash, trim and cook the sweet potato (8 to 10 minutes in microwave). Or use leftover cooked sweet potato.

Combine peas, chopped onion and butter. Cook 2 minutes in microwave

Combine the sweet potato, peas mixture, garlic and ginger. Top with cashews (or protein of your choice). Add 1 teaspoon of curry powder or paste. Mix all. Cook 2 more minutes in microwave.

Season with salt and pepper to taste. Garnish with sour cream and chopped cilantro. Enjoy!
