  • For the Crust:
  • 1/2 cup 1/2 cups shredded mozzarella cheese
  • 2 tablespoons 2 tablespoons cream cheese
  • 1 1 large egg
  • 3/4 cup 3/4 cup almond flour
  • 1/2 teaspoon 1/2 teaspoon baking powder
  • Splash Pinch of salt
  • For the Toppings:
  • 1/2 cup 1/2 cup sugar-free tomato sauce or marinara sauce
  • 1 cup 1 cup shredded mozzarella cheese
  • Your choice of toppings (pepperoni, mushrooms, bell peppers, olives, etc.)
  • Italian seasoning (optional)
Directions
  1. 1. Preheat the Oven: Preheat your oven to 425°F (220°C).
  2. Prepare the Crust: In a microwave-safe bowl, combine 1 1/2 cups shredded mozzarella cheese and 2 tablespoons cream cheese. Microwave on high for about 1 minute, or until the cheese is melted. Stir until smooth. Add 1 large egg, 3/4 cup almond flour, 1/2 teaspoon baking powder, and a pinch of salt to the melted cheese mixture. Mix well until a dough forms.
  3. 3. Shape the Crust: Place the dough between two sheets of parchment paper. Use a rolling pin to roll the dough out into a circle, about 1/4-inch thick. Remove the top layer of parchment paper and transfer the dough (with the bottom parchment paper) onto a baking sheet.
  4. 4. Bake the Crust: Bake the crust in the preheated oven for 10-12 minutes, or until it's golden brown and firm to the touch.
  5. 5. Add the Toppings: Remove the crust from the oven. Spread 1/2 cup sugar-free tomato sauce or marinara sauce evenly over the crust. Sprinkle 1 cup shredded mozzarella cheese on top of the sauce. Add your favorite toppings, such as pepperoni, mushrooms, bell peppers, olives, etc. Sprinkle with Italian seasoning if desired.
  6. 6. Bake the Pizza: Return the pizza to the oven and bake for another 8-10 minutes, or until the cheese is melted and bubbly.
