Directions
- 1. Preheat the Oven: Preheat your oven to 425°F (220°C).
- Prepare the Crust: In a microwave-safe bowl, combine 1 1/2 cups shredded mozzarella cheese and 2 tablespoons cream cheese. Microwave on high for about 1 minute, or until the cheese is melted. Stir until smooth. Add 1 large egg, 3/4 cup almond flour, 1/2 teaspoon baking powder, and a pinch of salt to the melted cheese mixture. Mix well until a dough forms.
- 3. Shape the Crust: Place the dough between two sheets of parchment paper. Use a rolling pin to roll the dough out into a circle, about 1/4-inch thick. Remove the top layer of parchment paper and transfer the dough (with the bottom parchment paper) onto a baking sheet.
- 4. Bake the Crust: Bake the crust in the preheated oven for 10-12 minutes, or until it's golden brown and firm to the touch.
- 5. Add the Toppings: Remove the crust from the oven. Spread 1/2 cup sugar-free tomato sauce or marinara sauce evenly over the crust. Sprinkle 1 cup shredded mozzarella cheese on top of the sauce. Add your favorite toppings, such as pepperoni, mushrooms, bell peppers, olives, etc. Sprinkle with Italian seasoning if desired.
- 6. Bake the Pizza: Return the pizza to the oven and bake for another 8-10 minutes, or until the cheese is melted and bubbly.
