Vegan Brown Butter Pecan Chocolate Chip Cookies

That's right - a vegan brown butter cookie recipe. It exists. I was inspired by a post on Not Not Nutritious about how you can infuse vegan butter with pecans or other nuts to create a brown butter flavor. So I used this method and took a few hints from one of my favorite chocolate chip cookie recipes - the King Arthur Baking 2024 recipe of the year cookie - to arrive at this recipe. It's the perfect vegan cookie with pecans and a rich, brown butter taste, brown sugar, and vegan chocolate chips. YUM. What You'll Need
Ingredients
  • 2 3/4 cups all-purpose flour or bread flour
  • 1/8 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 16 tablespoons vegan butter or margarine
  • 3/4 cup chopped pecans
  • 1 1/2 cups brown sugar
  • 1 tablespoon vanilla extract
  • 1/2 cup non-dairy milk
  • 3 tablespoons applesauce
  • 3/4 cup vegan chocolate chips
Directions
  1. In a large, covered pan heat vegan butter over the stovetop over medium to high heat, then add the chopped pecans, and set the timer to 10 minutes.
  2. After about two minutes, turn the heat down slightly and cover the pan to trap the heat, maybe three to five minutes. Let the vegan butter and pecans simmer over the stovetop for the full ten minutes. You should start to notice the butter foam and turn sort of golden brown in color.
  3. Turn the heat and timer off after the ten minutes is up. Remove the pan from the heat and transfer the contents to a large mixing bowl.
  4. Add brown sugar and vanilla extract to the mixing bowl with the vegan butter and pecans, and whisk to combine. Then, add the non-dairy milk and three tablespoons of applesauce, and continue whisking until everything is evenly dispersed.
  5. In a separate large mixing bowl, whisk together the flour, baking powder, and baking soda.
  6. Combine the dry and liquid ingredients in the same bowl and whisk together until smooth. Then, add the vegan chocolate chips and stir.
  7. Preheat the oven to 350 degrees and bake the cookies for 14 minutes.
