Ingredients
  • 2 medium zucchinis, spiralized into zoodles
  • 12 large shrimp, peeled and deveined
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 4 garlic cloves, minced
  • 1 teaspoon red pepper flakes (optional)
  • Salt and pepper, to taste
  • 1 tablespoon freshly squeezed lemon juice
  • 1 tablespoon freshly chopped parsley

  1. Heat a large skillet over medium heat and add butter and olive oil.
  2. Once the butter has melted, add the garlic and sauté for 1-2 minutes until fragrant.
  3. Add the shrimp to the skillet. Season with salt, pepper, and red pepper flakes if using. Cook for about 3-4 minutes on each side until shrimp are opaque and fully cooked.
  4. Remove the shrimp from the skillet and set aside.
  5. In the same skillet, add the spiralized zucchini noodles and sauté for about 2-3 minutes until slightly softened. Be careful not to overcook, as the zoodles will release water.
