“When I have unexpected happy hour guests or guests who unexpectedly stay very late into the night, I’m reminded of the virtues of the freezer door cocktail—a prebatched, prediluted cocktail that happily lives in a bottle in my freezer door indefinitely. I usually make it when I have an empty bourbon bottle (I save them just to make these), but you could also use a new 750-milliliter bottle and just pour off 9. ounces of the whiskey and reserve for another drink. Adding a tiny bit of water to the mix of bourbon, sweet vermouth (or try a split of dry and sweet vermouth), and bitters accounts for the subtle dilution you would normally achieve by shaking or stirring the drink with ice. All you need to do once guests roll in is divide the cocktail evenly among chilled glasses and top each one with a picture-perfect Maraschino cherry.” —Julianna McIntosh from Join Jules

Ingredients
  • 15 ounces bourbon or scotch (try Glenfiddich)
  • 7 ounces sweet vermouth (try Carpano Antica)
  • 2 ounces filtered water
  • 1/2 ounce (or 18 dashes) aromatic bitters (I recommend trying a split of orange and aromatic bitters)
  • 1/4 ounce absinthe, to rinse the glass (optional)
  • Luxardo Maraschino cherries, for garnish
Directions
  1. Using a funnel, add the whiskey, sweet vermouth, aromatic bitters, and water to a freezer-safe 750-milliliter bottle. (Alternatively omit the water and stir in a mixing glass with ice before serving for desired dilution.) Secure the cap tightly and shake lightly to mix. Place in your freezer to chill for at least 1 hour before serving.
  2. When almost ready to serve, place 1 or more coupe glasses in the freezer to chill.
  3. If using absinthe, rinse or spray the absinthe inside the chilled coupe glasses. (Learn more about this garnishing technique on page 28 of Pretty Simple Cocktails.) Pour 3 ounces of the cocktail into each glass and garnish with a Maraschino cherry.
