Ingredients

whole lemon, washed and dried

1 cup
sugar

Pinch of kosher salt

cans Athletic Brewing x Food52 Host & Toast NA Beer

tablespoons ginger juice or store-bought “ginger shot”
Directions

Cut the lemon into paper-thin slices and remove as many seeds as possible. Add the sliced lemon to a bowl, add the sugar and kosher salt, and toss everything together thoroughly. Cover the mixture and let it sit 4 hours or overnight until a thick syrup is formed and the lemons have softened.

The next day add 1 tablespoon of the lemon syrup to the bottom of two tall pint glasses, making sure to scoop up some of the pieces of lemon. Muddle the lemon in the bottom of the glass with the back of a wooden spoon or muddler. Fill the glass halfway up with ice and top with Host & Toast NA Beer. Give the pint glass a quick stir and float the ginger shot on top. Enjoy immediately.
