Ingredients
-
1,5
kg lamb (or mutton) shoulder, cut into chunks
-
2 tablespoons
olive oil
-
1 piece
large onion, finely chopped
-
2
garlic cloves, minced
-
1 teaspoon
ground cinnamon
-
1 teaspoon
ground cumin
-
1 teaspoon
ground ginger
-
1 teaspoon
turmeric
-
1 teaspoon
paprika
-
Salt and pepper to taste
-
10 pieces
dried apricots, halved
-
1/2 cup
almonds, toasted
-
1/2 cup
honey
-
1-2 tablespoons
sesame seeds, toasted
-
Fresh cilantro for garnish
Directions
-
Heat olive oil in a large tajine or heavy-bottomed pot over medium heat. Add the lamb (or mutton) pieces and brown on all sides, about 10 minutes.
-
Remove the meat and set it aside. In the same pot, sauté the chopped onion and garlic until softened, about 5 minutes.
-
Add the cinnamon, cumin, ginger, turmeric, paprika, salt, and pepper. Stir well to coat the onions with the spices.
-
Return the lamb to the pot, then add 2 cups of water (or beef broth) and bring to a simmer. Cover and cook on low heat for about 1.5 hours until the lamb is tender.
-
Stir in the apricots, honey, and toasted almonds. Continue to cook for another 30 minutes, allowing the apricots to soften and the sauce to thicken.
-
Garnish with sesame seeds and fresh cilantro before serving.
