What You'll Need
Ingredients
  • 1,5 kg lamb (or mutton) shoulder, cut into chunks
  • 2 tablespoons olive oil
  • 1 piece large onion, finely chopped
  • 2 garlic cloves, minced
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cumin
  • 1 teaspoon ground ginger
  • 1 teaspoon turmeric
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 10 pieces dried apricots, halved
  • 1/2 cup almonds, toasted
  • 1/2 cup honey
  • 1-2 tablespoons sesame seeds, toasted
  • Fresh cilantro for garnish
Directions
  1. Heat olive oil in a large tajine or heavy-bottomed pot over medium heat. Add the lamb (or mutton) pieces and brown on all sides, about 10 minutes.
  2. Remove the meat and set it aside. In the same pot, sauté the chopped onion and garlic until softened, about 5 minutes.
  3. Add the cinnamon, cumin, ginger, turmeric, paprika, salt, and pepper. Stir well to coat the onions with the spices.
  4. Return the lamb to the pot, then add 2 cups of water (or beef broth) and bring to a simmer. Cover and cook on low heat for about 1.5 hours until the lamb is tender.
  5. Stir in the apricots, honey, and toasted almonds. Continue to cook for another 30 minutes, allowing the apricots to soften and the sauce to thicken.
  6. Garnish with sesame seeds and fresh cilantro before serving.

I lately tried this dish, and I've to say that it was absolutely amazing! As a big fan of Moroccan cuisine, I love the combination of sweet and savory flavors, and this dish captures it impeccably. The lamb was tender and juicy, and the prunes added a rich sweetness that balanced beautifully with the spices. The sauce was thick, scrumptious, and full of depth. I highly recommend this recipe to anyone who loves authentic Moroccan food. It’s a must- try!
