Cardamon Cous Cous Pudding

Author Notes: I make this pudding for the farmers market in Stockton New Jersey all the time[email protected]

Serves: 6


  • 3 cups whole milk or goat milk
  • 1 cup couscous
  • 1 cup chopped dates
  • 1 piece cinnamon stick
  • 6 pieces cardamom


  1. simmer milk with cinnamon and cardamom for 5 minutes add couscous and dates cook for 15 minutes. remove cardamom and cinnamon. I put in individual glasses. top with whipped cream or greek yogurt.
