Cashewnut  Barfi

Ingredients

  • Sugar 300 grams
  • Cashewnut 100 grams
  • Grated Coconut 150 grams
  • Cardamom 5
  • Ghee ½ cup

Directions

  1. Soak cashewnuts in water for 1 hour
  2. Grind coconut and cashewnuts into a fine paste
  3. Add sugar and cook the mixture on a slow flame stirring constantly
  4. Add ghee and keep starring until the mixture leaves the side of the pan
  5. Add cardamom powder, and remove from flame
  6. Put the mixture on a greased tray for cooling
  7. When cool, cut into cubes.

Is there something like this made with pistachios in India? My sister brought something back several years ago, and it reminds me of this.
