I have been making my own citrus flavored EVOO for the last six months. We used it in everything from Lemon Flavored Cup Cakes to a Stuffed Pork Loin Roast.
In baking, instead of using all butter, substitute half with the citrus infused EVOO. Amazing results!
I also oven roast seeded fruit (apples, pears, Asian pear), peeled, cut into bite size chunks then coated with a tablespoon of citrus oil, 1/4 cup of OJ and either 2 tablespoons of orange marmalade or lemon curd. Final steps are a light coating of maple/cinnamon sugar then spread on parchment paper and baked for 45 minutes at 375. Talk about finger licking good. A half cookie sheet full lasts about 10 days...if that.
