Traditionally we use stone grinder for grinding(wet grind) the masala

Ingredients

Grated mango 3 cup

Sesame oil ½ cup

Dates (Pitted and Halved ) ¼ cup

Vinegar ¼ cup

Sugar 2 tsp
-
Slices Ginger 2 tsp

Sliced garlic 1 tsp

Salt to taste

To be ground

Kashmir dry red chilies 15 (Seeds removed)

Garlic pod 6

Husked mustered ¼ cup

Vinegar ¼ cup
Directions

Mix Grated mango and salt In A flat vessel .
Keep it over night

Next day keep the salted mangoes in sunlight till liquid just dries up

Heat oil fry the sliced ginger and garlic and put into the mango.

Put the ground chili paste in the remaining oil fry for few minute..

Put the mango, sugar ,Dates vinegar

Allow to boil once .Remove from heat
