Mild: These are best for sauces served over or alongside dishes, such as enchiladas. They're often referred to as “chile de color” -- meaning they are for color, not so much for heat. Rest assured they have plenty of flavor, but the spice level isn't over the top.
Hot: These peppers are searingly hot -- use them specifically for salsas served on the side of a meal. Add tomatoes to dial down the heat a notch if you like. The chile de arbol can be lightly fried or toasted (about 30-45 seconds) before making a salsa to give it richer, fuller-bodied flavor.
