(Puff pastry, pie dough, biscuits, shortbread...anything that calls for a higher butterfat content, really.) Then there’s the All-Purpose, which handles everything else. Restaurants like Eleven Madison Park and Maman use it in their own kitchens, and after trying it ourselves, we can see why.
