Let's get this out of the way, because it was the first thing we asked, too: “formaticum” was first used by Roman Legionnaires to describe compressed curds of milk (essentially, cheese!). Back in present day, Mark Goldman was sampling cheese in Paris when he realized each type was wrapped differently, impacting the flavor.
