Stuff your bird with your favorite things—herbs, garlic, perhaps a lemon or two—then nestle into the dish with some potatoes or other roasting veggies and cover with the dome-shaped lid, which diffuses heat all around the meat for a bird that’s perfectly juicy all the way through, no basting required.
