Literally living up to its name (“olio nuovo” translates to “new oil”) this bottle is the very first batch of the season. The Tuscan trees grow around a vineyard and are hand-picked in November, pressed nearby at a local mill, then bottled so you can tap into it’s unfiltered, vibrantly green goodness. Reviewers say the grassy flavors and extra spicy-ness make it so addictive. Pour it over anything you please but definitely add a few extra glugs to this focaccia for good luck

Up in Napa County, California, Hudson Ranch and Vineyards is doing something special on their 200 planted acres of sprawling green. They have a long-term view of farming, one that takes stewardship of the land seriously: They encourage the growth of native grasses, build bird boxes and spread 600 tons of compost annually. Their water leaves the farm as clean as it arrived. So it’s no wonder that the wines and olive oil that come from their land are lauded by environmentally conscious good food advocates (and it all just tastes amazing, too).
