Start with the finest ingredients.
Better than bacon? This slow-smoked pork belly is hand-trimmed and hand-salted, and seasoned with garlic, clove, bay leaf, and black pepper, and smoked over hickory wood. The medley of ingredients and spices comes together to make an incredibly flavorful meat that we add to light salads, risotto, pasta, and just about any savory dish we make. Warm it up or crisp it in a skillet if you like, but happily you can also slice and eat it as is -- since it's smoked, you don't need to cook it.

Store refrigerated at 38 to 40 degrees Fahrenheit. The shelf life on the Smoked Pancetta is 14 weeks from the manufacturing date if kept unopened and refrigerated. Each piece of Smoked Pancetta should have a small white sticker with a 5-digit number printed on it that indicates the manufacturing date. The first two digits indicate the year, and the next three digits indicate the Julian date of manufacturing. For example, a sticker with the number "14237" means that the piece was made on the 237th day of 2014, or August 25. This piece would keep until December 1 if unopened and refrigerated.
