The Benriner mandoline is the gold standard of it's kind. It's incredibly sharp and easy to use, and is a standard in professional kitchens. The steel blades are actually compressed, and then heat treated, and finished by hand, giving it a quality comparable to really excellent knives. It's got four interchangeable blades that let you slice, shred, julienne, or thread-cut any vegetable. You can easily adjust the thickness of each slice, and the safety guard prevents finger injuries during delicate slicing.
