Hand-Rolled Caciocavallo Cheese
Meet the Maker
This family-run company makes all their cheese by hand using traditional Italian techniques. Run by Freddy Destefano, an electrician, and his wife Cristina, the company launched in late 2003. Freddy learned the art of cheese from his mother who grew up in Italy making these cheeses for decades. Luckily he decided to produce and sell cheese according to her recipe, so everyone can taste the result of years of well-honed rustic cooking knowledge.View Full Profile
