The Great Pumpkin may have no-showed, but pumpkin remains great, indeed. Once you get past its thick outer shell, cut away the flesh, and scoop out the seeds, you're faced with the reality of just how much stuff even just one pumpkin contains. It can be overwhelming to look at your small mound of cubed pumpkin or slimey seeds or orangey purée. You might wonder: "How will I, as one human, either feed all of that to myself or force it upon my family and friends?"
In hummus, in pasta dishes, in cookies, in granola bars, and in cakes -- that's how! Pumpkin is like your coolest friend: It fits in everywhere, effortlessly. Whether you add it to a soup with goat cheese or to cookies with chocolate chips, pumpkin will flatter the other ingredients yet keep its own distinct personality.
