Greetings Jenny, Indeed it is the season for grilled cheese sandwiches. This combo sounds divine. We have plundered our turkey leftovers by way of turkey reubens. I have a panini grill and we are very fond of the results it provides. There is no need for butter, I can prepare 4 sandwiches at a time and I never suffer the consequences of a burnt sandwich on an untended griddle. We call these "toasties". The Pistachio Sage Pesto is wonderful! I didn't have any bread or applesauce handy, so I had the pesto with some sliced apple and sliced sharp cheddar. Delicious!
I want to try a grilled cheese version of this with the pesto, sliced apple, sliced cheddar, caramelized onion, and bacon. :) I froze the leftover pesto -- hopefully it will thaw well.

Perfect! I'm cooking for vegetarian clients and needed a creative panini recipe for their Friday night soup and sandwich dinner! Plenty of fresh sage leftover from Thanksgiving, and I'll sub fresh apple slices for the applesauce - thanks!

Jenny, this is the most strange and wonderfully delicious sandwich! As I was setting all of the ingredients on the counter, I was a little skeptical of how it would all come together, but sure enough this is one of the best grilled cheese sandwiches I have ever made or tasted - and my husband agrees! This is definitely going to get worked in to our regular repertoire - thanks!!!
