Toast with Mustard Mayo and Avocado

Sometimes I need to be reminded of the simple not-quite-recipes that are just as pleasing as an elaborate feast. Last week, my friend Peter took me to lunch at Iris Cafe, a sweet oasis tucked away on a residential Brooklyn street. I ordered toasts with mustard mayonnaise and mashed avocado, drank a ginger beer, and couldn't have been happier.

Here I share this humble gem, along with another favorite, fresh radishes with butter and salt. The butter temperature is key -- it should be pliable but not at all mushy. I trust you to supply the ginger beer. Happy lunching.

Tartine with Mustard Mayo and Mashed Avocado

Serves 1

  • 1 teaspoon Dijon mustard
  • 1 teaspoon mayonnaise
  • 2 slices whole grain bread, toasted
  • 1/2 ripe avocado, peeled
  • A few drops lemon juice
  • Salt

In a small bowl, blend the mustard and mayonnaise. Spread on the toasted bread. In another bowl mash the avocado with the lemon juice and salt to taste. Spoon the avocado over the mustard mayo and spread it to the edges.

Radishes with Butter and Salt

Serves 1

  • Handful fresh radishes with their tops attached, scrubbed
  • Fresh unsalted butter, just below room temperature (so it's soft but not oily)
  • Flaky sea salt like Maldon

Dip the radishes in butter and then salt. Crunch!

your photo with the multigrain bread from elis (now available at NYC costcos) brought back memories of our yuppie gourmet sandwich shop days in midtown @ Paradise Catering and Cafe
we used that exact( delicious ) bread with fresh avocado slices, alpha sprouts and cheddar cheese for our #13 sandwich - yummy cold or pressed/grilled.

thanks for a trip down memory lane.
ate some ripe avocado with my salad for dinner tonight,
hass avocados are plentiful and cheap at our local produce markets these days.

It's great bread -- makes delicious toast. Merrill also likes to toast it and top it with fresh ricotta and a pinch of salt.

Just add a frsh-from-the-gaden tomato and you have my FAVORITE summer meal!

(okokok, so I add bacon or ham a lot too)

This is a variation of a sandwich I often whip up a variation of for a quick lunch. Grated carrot would be a nice addition. So would... A splash of balsamic. A few basil leaves. Pinch of cumin. Cherry tomatoes.

Try adding grated lemon peel, juice and anchovy paste to the butter., spread it on the grain bread, top with sliced radishes and sliced chives and you have company food....

During my childhood years, our California relatives always sent a crate of avocados; one way they were used up was to smash one or two with a little lemon, salt, pepper and garlic, and spread on bread crusty Italian bread…yum, such a treat. Haven’t had that for a while, nor have I tried with a bit of Dijon or mayo, hmmm, think I will have to revisit my childhood avocado treat…Thanks!

I love meals like this, especially in the summer when everything is so fresh all you really have to do is make a spread and assemble some yummy condiments to go with breads, veggies and meats.

Have you had the Alton Brown-inspired sandwich with mashed avocado and sardines? If you like sardines (or at least appreciate how good they are for you), it's pretty tasty...love radishes with butter and salt btw!

Wish I could get past the sardines. I know they are so good for you. Only way I can eat them is if they're super-fresh, and I'm sitting seaside at an outdoor cafe somewhere in, say, Portugal. Otherwise, there's just no hope. But the avocado and radishes--they're mine any day.

Have you been to Café Gitane on Mott? Their rendition of avocado toast is very similar, and comes topped with red pepper flakes. Delish!

Oh, my goodness--haven't been to Gitane in ages, but used to go regularly. Don't remember the avocado toast w/red pepper flakes, but now I know I'll have to go back. Thanks for the reminder.
