What is a good, elegant main dish to serve a sit down party of 22?

I live in Seattle and we have wonderful salmon. Do not get farm raised salmon. Doesn't have the flavoring and they use food coloring so it is a weird color. If you choose to go salmon order from a reputable seafood dealer. Will make all the difference. Good luck, SallyBroff!
