1 cup crème fraîche (8 ounces)
1 tablespoon prepared horseradish
1 tablespoon chopped fresh chives
2 teaspoons Sherry wine vinegar
Salt and Pepper to taste
Fold all ingredients together, chill for an hour.

added over 1 year agoI like horseradish as well. But chimichurri would also work; essentially chopped parsley, lots of garlic, olive oil, and some hot pepper flakes. Salt and ground pepper. I like to add a little cilantro too (unless you are feeding cilantro phobics).
consider a compound butter - simple, like butter, parsely a bit of finely chopped shallot and sprinkle of cayenne.
