I used some but I can't think for what, maybe chocolate cake. You can make quiche or crustless quiche.

Make some sour-cream cornbread muffins and freeze them. You'll have a leg up on mid-week meals upon your return.

How about a sour cream coffee cake ? Make it in a 13 by 9 inch pyrex pan, wrap well and stick in freezer. Have your cake and eat it , too! (When you get back)!
