My absolute favorite is lotus root soup--lotus root cut in slices (round slices so it looks like Swiss cheese) in a clear broth, salted to taste.
Alternatively, lotus root can be sliced thin and simply sautéed in vegetable oil, garnished with scallions.
Or deep fried (tempura style).

SKK has the right idea. Lotus Root chips are great tasting. Although I might fry them in hot peanut oil instead.
