Perfect ice cream sandwich cookie?

I promised the four-year old we could make ice cream sandwiches today. I have a normal go-to chocolate chip cookie recipe but I'm looking for one that would go well with the ice cream - a little chewier, softer, larger. Suggestions

If your go to chocolate chip cookie recipe works, why not just remove the cookies from the oven a little sooner to maintain that soft chewy texture you're looking for. As for larger, well there's no end to the size except the recipe

This makes awesome ice cream sandwiches. We're making them tomorrow! http://www.food52.com/recipes...

The chubby chewy would also be good with ice cream: http://www.food52.com/recipes...

And Merrill has this one which sounds amazing: http://www.food52.com/recipes...

I like chocolate chip cookies or sugar cookies. Either way I like to bake them 90% of the way through so that do not become too brittle for sandwiching.
