You could do a variation on this! http://www.food52.com/recipes...

Or you could braise the leeks separately, in stock/water/wine, and dot with butter.

Suzanne Goin's braised leeks are dynamite. You could devil those pork chops and bake them atop the leeks. I'd come to dinner at your house for that! ;)
