Adding a tin of tomatoes to a massaman lamb shanks curry... What do you reckon?

Why not? I would advise roasting the tomatoes, or pan frying them with the pan fried spices, before adding the meat. This helps to carmalize the sugar from the tomatoes, adding depth and character, which is why, I'm assuming, you are adding tomatoes to begin with?
