What is the best seitan cookbook?

Vegetarian cookbooks usually focus on tofu, tempeh and grains and tend to ignore seitan.

I would check out The Candle Cafe Cookbook. It's not purely seitan focused, but they make some of the best sitan at their restaurants, as far as I'm concerned. I'd assume the cookbook has, at least, quite a few.
