Urgent! Kosher Pate?

I've been looking for pâté and terrine recipes and they all involve backfat or some form of bacon. This sounds absolutely delicious, but I'm looking for recipes I can make with my jewish, kosher mother-in-law, Any suggestions for alternatives to back fat?

Have you looked for a duck pate recipe? Some only use duck fat which may work.

chicken fat or shmaltz would be the traditional chopped liver approach. I usually just use olive oil.
