I have a LOT of chocolate mint in my garden. Would like to make some kind of mint syrup that I could add to desserts or put on ice cream.

I would also suggest taking the best looking leaves and them dipping them in melted dark chocolate or white chocolate and serving it as a 'light' dessert.
