Urgent! Can you pause a braise?

I started braising short ribs (to be served tomorrow night) that are supposed to braise for about 3 hours. But, I'm now going to have to leave the house an hour before they're done. Can I pause the braise for a few hours and finish it later tonight or will that ruin the dish?

Absolutely - the only factor would be if the meat was still raw, but in this case it's not so you'll be fine to cook it a bit longer tomorrow/tonight. Make sure to store it safely though - either keep it just above 140F while you're out, or get it down to 40F quickly to refrigerate.
