I was going to suggest subbing applesauce for oil. Should work pretty well in almost any bran muffin recipe.
I loved the recipe in La Brea Bakery pastry book--a lot of the sweetness is from pureed raisins that have been simmered a while. Very bran-y, very light textured. Great with pumpkin seeds (pepitas) on top!
