I went for the peaches. Always good idea this time of year! Thanks for the suggestions.

Luciemom, will try peaches when our local peaches show up!

I only recently saw this recipe, but my first reaction was, I wonder how this will work with peaches if I don't have mangoes that day? I'm going to experiment with the canned version of each so I can enjoy this in winter.

I would go for peaches. But you could also do a dried mango or dried apricots

Try any tropical fruit as a substitute. Like Queen Sashy mentions above, papaya is good. But apricots and peaches would be wonderful also...in my opinion anyway!

I think that green papaya and firm apricots or peaches might work too.
