If you were to ask this question to any Turk, he or she would tell you to make haydari, which is probably the best yogurt dip you'll ever have the privilege to try. Check it out here: http://turkishfood.about.com/od/CheeseYogurtDairy/r/Strained-Yogurt-With-Garlic-And-Herbs-Is-Classic-Turkish-meze.htm
Also there's a cucumber-yogurt condiment/dip in Turkish cuisine called Cacik, which is very traditionally served with grilled meat like kabab and adana.
If you want to do a cold/middle eastern preparation, you could serve it with hummus, good soft pita (no pocket), and a chopped salad of cucumbers, tomatoes, and feta tossed in olive oil, salt and pepper.
Some kind of middle eastern garbanzo bean salad. There are lots of options but usually include plenty of veggies like tomato and cucumber. Mint is usually spot on for the flavors I often put in a kabob.
Let's think healthy. Steamed vegetables, or red and yellow and green peppers sautéed in olive oil, preferably organic extra-virgin coupled with ripe hothouse tomatoes and pine nuts, or cooked red potatoes, or my Vivaldi's Four Seasons salad, or my salad for a dog-days afternoon.
I second (third) the tabbouleh suggestion and any kind of flatbread. Chopped salads are great, adjusted to fit the cuisine of your kabobs. My favourite turkish restaurant makes ezme salatasi, a wonderful kind of salsa made of tomatoes, cucumbers, peppers (mild and hot ones), parsley, onion and a dressing with garlic, lemon, pepper and olive oil. It’s perfect with any kind of grilled meat.
I've been making a lot of couscous salads lately - Israeli couscous cooked in broth, add in some raw or sauteed veggie, olive oil and some vinegar or lemon juice. Lots of possible variations!
How about spiced cous-cous? Maybe fresh corn cooked in brown butter with fresh chiffonade basil thrown in at the end? Spaghetti-squash "pasta" with parsley pesto?
