either before or after 1st rise is fine for freezing; doing it before saves you space in freezer but takes more time when you defrost. on other hand, you could do (1st & all) rises, shape, then freeze, which means a quick trip from freezer to oven. your trade off - time now vs later, space now vs time later.
Nancy has pretty well covered the subject. You can certainly freeze your rolls a week in advance (would you believe a month in advance?) I've done it just about every way you can imagine. Your best results will be from freezing the dough after the first rise -- punch it down, wrap and freeze. Give it plenty of time to thaw before forming the rolls and the second rise before baking.
