What ice cream or sorbet flavor with pair nicely with a rose wter infused cake?

Our local Indian grocery has an array of wonderful Kulfi's - one of the best is rosewater/pistachio/cardamon (and I'm not even a big fan of floral flavors.) Riffing on that combo, you could make pistachio/cardamon ice cream to go with your rose cake. (If you're using store bought, I'd use pistachio.)

I agree with Nancy, allow one special flavor to shine rather than overload it with competition, so I would vote for vanilla.

Are you making your own ice cream? I love the combination of rosewater and avocado, and I think an avocado ice cream would be luscious. I don’t make ice cream, but Jamie Oliver has a recipe posted on the web, and there are other recipes as well. I also found a list of food pairings that recommends pairing rosewater with saffron, cardamom, jasmine, almonds, pistachios and coconuts. Of those, I think I would choose cardamom, almonds, pistachio, or coconut. I’ve had jasmine ice cream and loved it, but think it is too flowery to go with rosewater.

Margie - I like your idea of avocado ice cream. It also reminds me of an avocado chocolate mousse I've made often, and which might also make a nice counterpoint - as itself or tranformed into an ice cream - for rosewater.
Last comment: I think rosewater is so distinctive a flavor, I would see it as a jewel on a rather simple background. So, also, maybe plain vanilla or chocolate.

pistachio or saffron would be nice. I always like rose with raspberry.
