Any kind of root vegetable mash would be great. I like boulangere’s Sour Mash Mash on this site

Sounds delicious! I'd just roast some winter vegetables in the oven with a little olive oil and salt & pepper: carrots, winter squash or brussels sprouts. You could also do roasted potatoes, wild rice or a nice kale salad.

A few ideas....

Maybe a salad with orange segments and toasted nuts of some kind? Could make a lemon vinaigrette and grate a little ginger into it to make it interesting. Or greens with April Bloomfields lemon caper dressing (on this site). Or some roasted veggies like brussel sprouts (I like to toss with a bit of balsamic, maple syrup, and salt and pepper) or roasted broccoli. Or this kale salad: https://food52.com/recipes/15584-northern-spy-s-kale-salad
