How to make Fried Rice with yesterday's leftover brown rice and porkchops?

I have 2 left over pork chops and about 3 cups cooked brown rice, thinking of making fried rice?

You could adapt mrslarkin's recipe. http://www.food52.com/recipes...
I'd sub the pork for the ham, and scale everything else down to about 3/5 of what the recipe calls for (within reason, of course!)

Excellent! worked out quite well -- can I freeze the leftovers (as it's already made from leftovers)?

Probably, texture may not be as good once frozen, though.

You can freeze rice - the trick to getting the texture back is to re-steam it in the microwave or stovetop with a little water or broth to help get the moisture back. Good luck!
