Hi! That would probably work out fine, but it would slightly alter the cake's texture (I suspect it would turn out drier and fluffier).

Sure. I make a New-England-style corn cake every spring to serve with fresh berries, and have always used whole eggs. You'll likely benefit from the extra egg protein because this cake is so high in fats which have a tenderizing effect.
