added about 2 years agoSounds lovely! Maybe add some lime juice and sesame oil to the marinade.
I've done this:
1lb shrimp, shells off deveined
3 stalks lemongrass, trimmed, pounded a bit, sliced thin
2 cloves garlic crushed
1 shallot thinly sliced if I have one
2-3tbs fish sauce
Juice of 1/2 lime or so
Some heat -- dried chilis or cayenne, to taste
A few drops sesame oil.
Grated ginger too, maybe
Marinate 2hrs or so, grill on skewers, serve over rice or noodles. Better yet serve as part of Vietnamese vermicelli-type salad (bun).
I've done this too using sugar cane skewers, which turned out fantastic. I bought a piece of sugar cane and whittled it into skewers.
